This is a white tea crafted from a new cultivar called Jin Mu Dan (Gold Peony). Developed within the last decade, the cultivar was one of several planted in a newly developed fully organic garden located in northeastern Fujian province. In 2013, we collaborated with this tea maker to create three new teas from a unique yellow leaf tea plant. In 2014, we worked with the same tea maker to create four teas from this Gold Peony cultivar.
This tea was handpicked in mid-April 2014, and consists of an equal proportion of buds to leaves. The buds contribute the tea’s aromatics and texture, while the pale green leaves give the tea its complexity. Processing involved cool withering indoors for approximately 30 hours under constant airflow. This time-intensive process ensures an even oxidation without significant discoloration or leaf damage. Once the appropriate withering time is reached, the leaves are dehydrated on bamboo racks in heated rooms.
The result is a tea that leans towards brighter floral notes with a present but not overwhelming creaminess. The texture of the tea is also light and lively and accentuates the orange blossom honey character of the tea.
